For the uninitiated, a trivet is what some of us usually refer to as a potholder or even dish placemat. Those mats you lay down before the casserole arrived? That’s a trivet mat! Or maybe a raised wooden trivet. Now that I think of it, I referred to those as ‘thingies for pots’. Wrong - they were trivets for hot dishes! Now, technically, a trivet has to have 3 (tri) feet, but some have 4 and some wooden ones, in particular, have no feet at all. But the classic trivet is essentially a tripod that holds a hot dish or pot above the surface of the table. Typically, trivets are made from metal, but also wood, ceramic, cork, and even fabric, like those quilted potholders you use for double-duty - protecting both your hands and the table. Most trivets of the last couple of centuries were composed of cast iron, brass, copper, and bronze. This is something to keep in mind because they are serious collector's items these days. If you can believe it, even the Vatican is hawking these on ! I kid you not. Regardless of how you name - or value! - them, trivets are essential dining ‘furniture’.
